Our Decaf coffee comes from Colombia, where conservation of water is key. The farmers from this area have developed a process to decaffeinate coffee from sugar cane. The process uses ethyl acetate, which is an organic compound found in sugar cane making this coffee 97% decaf. The process tends to leave a pleasant sweet taste. We taste a cherry like acidity and a sweet mellow body.
